If you’re fancy to cook something different, you should try this Mexican dish acapulco chicken. It’s so fast and easy, not to mention colorful and delicious! Definitely a keeper for a busy weeknight or lazy weekend for you.
Ingredients
1 medium onion; chopped
3 cloves of garlic; minced
1 tbsp cayenne pepper
1 tbsp chili powder
2 tsp ground cumin
2 jalapeno peppers; seeded and minced
1/2 red bell peppers; chopped
1/2 yellow bell peppers; chopped
1 can diced tomatoes
2 cups unsalted chicken broth
1 tbsp olive oil
4 skinless, boneless chicken breast halves – cut into bite-size pieces
sour cream (optional)
guacamole (optional)
salt and pepper to taste
Directions
Season chicken with cayenne pepper and salt. Heat oil in a large skillet over medium high heat and saute seasoned chicken for 5 minutes, or until no longer pink. Remove from skillet with a slotted spoon and keep warm.
In the same skillet, stir fry onion and garlic until onion soft. Add red and yellow bell pepper, cook until soft. Add jalapeno peppers, tomatoes, chili powder and ground cumin and stir for 2 minutes. Add chicken broth and cook, stirring, for an additional 5 minutes; add chicken, salt and pepper and heated thoroughly, allowing the liquid to thick.
Serve with rice with baked tortilla chips and guacamole and sour cream.
